No Cook Lemon Coconut Squares

Total Time: 2 hrs 10 mins Preparation Time: 10 mins Cook Time: 2 hrs

Ingredients

  • Servings: 15
  • 125 g butter
  • 250 g milk arrowroot biscuits
  • 1 teaspoon grated lemon rind
  • juice of one lemon
  • 1 cup coconut
  • 1/3 cup sweetened condensed milk
  • 1 1/3 cups icing sugar
  • 3 tablespoons lemon juice
  • 1 tablespoon butter
  • 1/3 cup coconut, extra

Recipe

  • 1 melt the butter.
  • 2 crush the biscuits finely.
  • 3 mix all the ingredients in a medium sized bowl.
  • 4 add more condenced milk if necessary.
  • 5 press into a brownie tin (15x20cm), greased.
  • 6 chill until set.
  • 7 cover with lemon icing.
  • 8 place the icing sugar, lemon juice and butter in a bowl and mix thoroughly.
  • 9 top slice with extra coconut.
  • 10 slice.
  • 11 keep in the fridge.
  • 12 keeps for upto 4 days.
