No Cook Lemon Coconut Squares

Ingredients

- 125 g butter
- 250 g milk arrowroot biscuits
- 1 teaspoon grated lemon rind
- juice of one lemon
- 1 cup coconut
- 1/3 cup sweetened condensed milk
- 1 1/3 cups icing sugar
- 3 tablespoons lemon juice
- 1 tablespoon butter
- 1/3 cup coconut, extra
Recipe
- 1 melt the butter.
- 2 crush the biscuits finely.
- 3 mix all the ingredients in a medium sized bowl.
- 4 add more condenced milk if necessary.
- 5 press into a brownie tin (15x20cm), greased.
- 6 chill until set.
- 7 cover with lemon icing.
- 8 place the icing sugar, lemon juice and butter in a bowl and mix thoroughly.
- 9 top slice with extra coconut.
- 10 slice.
- 11 keep in the fridge.
- 12 keeps for upto 4 days.
