Mrs. Kern's Date Balls

Total Time: 1 hr 10 mins Preparation Time: 1 hr Cook Time: 10 mins

Ingredients

  • Servings: 60
  • 1/2 cup butter
  • 1 cup sugar
  • 1 cup dates, finely chopped
  • 1 egg, lightly beaten
  • 2 teaspoons vanilla extract
  • 2 1/2 cups crispy rice cereal (rice krispies)
  • 2 cups shredded coconut or 2 cups powdered sugar or 2 cups nuts

Recipe

  • 1 melt butter in a a saucepan. add sugar, dates, and egg. cook 10 minutes over low-medium heat, stirring constantly.
  • 2 remove from heat; add vanilla. cool 5 minutes.
  • 3 put rice krispies in a large bowl, and pour butter/sugar mixture over cereal. cool slightly (enough so you don't burn your fingers shaping shaping cookies).
  • 4 shape into 1" balls or small logs. roll in coconut, powdered sugar, or nuts.
  • 5 place on waxed paper lined cookie sheet. refrigerate until firm.
