Gluten-free & Dairy-free Coconut Cookies

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • 1/4 cup cornstarch
  • 1/4 cup sugar
  • 3/4 cup rice flour
  • 1/2 cup margarine
  • 3/4 cup unsweetened coconut
  • 1/2 teaspoon orange extract (optional)

Recipe

  • 1 sift together the corn starch and flour in one bowl.
  • 2 mix the margarine and sugar until fluffy in another bowl (i did this by hand).
  • 3 add vanilla or orange extract, if using, to the margarine mixture.
  • 4 add flour mixture to margarine mixture and mix until combined.
  • 5 using a tablespoon measure, spoon onto a very lightly greased cookie sheet.
  • 6 bake at 350f for about 20 minutes until golden brown on the edges.
  • 7 this will make about 16 cookies (2" in diameter).
  • 8 you can drizzle with some melted chocolate after they have cooled for the extra flavor and visual effect.
