Gluten-free & Dairy-free Coconut Cookies

Ingredients
- 1/4 cup cornstarch
- 1/4 cup sugar
- 3/4 cup rice flour
- 1/2 cup margarine
- 3/4 cup unsweetened coconut
- 1/2 teaspoon orange extract (optional)
Recipe
- 1 sift together the corn starch and flour in one bowl.
- 2 mix the margarine and sugar until fluffy in another bowl (i did this by hand).
- 3 add vanilla or orange extract, if using, to the margarine mixture.
- 4 add flour mixture to margarine mixture and mix until combined.
- 5 using a tablespoon measure, spoon onto a very lightly greased cookie sheet.
- 6 bake at 350f for about 20 minutes until golden brown on the edges.
- 7 this will make about 16 cookies (2" in diameter).
- 8 you can drizzle with some melted chocolate after they have cooled for the extra flavor and visual effect.
