- 6 boneless skinless chicken breasts, cut into 1-inch pieces
- 1 cup coconut milk
- 2 sprigs fresh thyme, minced
- 1 medium onion, chopped
- 1/2 teaspoon allspice
Recipe
- 1 place all ingredients in large heavy skillet.
- 2 simmer over low heat stirring occasional for 45 minutes or until chicken is tender.
- 3 serve over rice.
