Jamaican Chicken Run Down

Ingredients

  • Servings: 6
  • 6 boneless skinless chicken breasts, cut into 1-inch pieces
  • 1 cup coconut milk
  • 2 sprigs fresh thyme, minced
  • 1 medium onion, chopped
  • 1/2 teaspoon allspice

Recipe

  • 1 place all ingredients in large heavy skillet.
  • 2 simmer over low heat stirring occasional for 45 minutes or until chicken is tender.
  • 3 serve over rice.
