Greek-style Chickpeas With Greens And Tomatoes

Ingredients

- 2 medium onions, chopped
- 3 garlic cloves, minced
- 1 tablespoon coconut oil
- 1 (15 ounce) can chickpeas
- 3 large tomatoes
- 1/4 teaspoon crushed red pepper flakes
- 1 teaspoon smoked paprika
- 1 teaspoon oregano
- 3 tablespoons lemon juice
- 1/4 cup dry wine
- 6 cups spinach, chopped
Recipe
- 1 saute the onions and garlic in oil in a large pot.
- 2 add the chickpeas and tomatoes.
- 3 season with chili flakes, paprika, and oregano and let simmer for about 5 minute.
- 4 add the spinach and wine and cook until the spinach is wilted. then add the lemon juice.
- 5 serve over orzo.
