Greek-style Chickpeas With Greens And Tomatoes

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 2 medium onions, chopped
  • 3 garlic cloves, minced
  • 1 tablespoon coconut oil
  • 1 (15 ounce) can chickpeas
  • 3 large tomatoes
  • 1/4 teaspoon crushed red pepper flakes
  • 1 teaspoon smoked paprika
  • 1 teaspoon oregano
  • 3 tablespoons lemon juice
  • 1/4 cup dry wine
  • 6 cups spinach, chopped

Recipe

  • 1 saute the onions and garlic in oil in a large pot.
  • 2 add the chickpeas and tomatoes.
  • 3 season with chili flakes, paprika, and oregano and let simmer for about 5 minute.
  • 4 add the spinach and wine and cook until the spinach is wilted. then add the lemon juice.
  • 5 serve over orzo.
