Gluten-free Morning Glory Muffins

Total Time: 32 mins Preparation Time: 10 mins Cook Time: 22 mins

Ingredients

  • Servings: 12
  • 1 cup gluten-free flour
  • 1 teaspoon xanthan gum
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon ground cloves
  • 1/8 cup sucanat
  • 1/4 cup unsweetened coconut
  • 1 cup carrot, grated
  • 1/4 cup raisins
  • 1 small mcintosh apple, diced
  • 2 eggs
  • 1/2 cup unsweetened applesauce
  • 1 teaspoon vanilla
  • 1 teaspoon orange extract
  • 1/4 cup soymilk

Recipe

  • 1 preheat oven to 350°f.
  • 2 mix dry ingredients.
  • 3 mix wet, then add into dry.
  • 4 fill cups to about 2/3 cup full.
  • 5 bake for about 22 minutes.
