Low Fat Morning Glory Muffins

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • 1 1/2 cups flour
  • 1/2 cup whole wheat flour
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 2 teaspoons baking soda
  • 2 teaspoons cinnamon
  • 1/2 teaspoon clove
  • 2 cups grated carrots or 2 cups zucchini
  • 1/2 cup raisins
  • 1/2 cup chopped walnuts
  • 1/2 cup unsweetened coconut
  • 1 apple, peeled and grated
  • 3 eggs, beaten
  • 1 cup applesauce
  • 2 teaspoons vanilla

Recipe

  • 1 mix the first 7 ingredients (flours, sugars, baking soda, and spices).
  • 2 stir in the rest of the ingredients.
  • 3 (you can substitute vegetable oil for the applesauce but then it's not low fat anymore!) fill muffin cups 2/3 full of batter.
  • 4 bake for 20 minutes at 350 degrees f.
