Henry's Jerome Bars

Total Time: 35 mins Preparation Time: 30 mins Cook Time: 5 mins

Ingredients

  • 1 (14 1/2 ounce) box graham crackers
  • 1 1/4 cups butter
  • 1 cup sugar
  • 1 egg
  • 1/2 cup evaporated milk
  • 1 cup pecans, chopped
  • 1 cup coconut, flaked
  • 2 cups confectioners' sugar
  • 1/2 cup butter, softened
  • 3 tablespoons evaporated milk
  • 1 teaspoon vanilla

Recipe

  • 1 line a 9x13 pan with whole graham crackers.
  • 2 in a saucepan over medium heat, melt butter.
  • 3 add sugar, egg and milk and mix well.
  • 4 bring to boil, stirring constantly.
  • 5 stir in nuts, coconut and 1 cup crushed graham cracker crumbs.
  • 6 spread evenly over crackers in pan.
  • 7 top this with another layer of whole graham crackers.
  • 8 top with icing. chill and cut into squares.
  • 9 icing:.
  • 10 mix all icing ingredients together until creamy.
  • 11 spread evenly on top of crackers.
