Lemon Chia Seed Muffins

Ingredients
- 2 cups flour
- 1 tablespoon baking powder
- 1/4 cup sugar or 1/4 cup coconut sugar
- 1/4 cup maple syrup
- 1 1/2 tablespoons chia seeds
- 1/2 teaspoon salt
- 3/4 cup almond milk
- 1/2 cup oil or 1/2 cup applesauce
- 2 lemons
Recipe
- 1 preheat oven to 350 degrees.
- 2 place muffin liners in muffin tin. makes approximately 12 muffins.
- 3 in a large bowl combine the flour, baking powder, salt and sugar.
- 4 in a smaller bowl combine the maple syrup, milk, lemon juice and zest and the oil or applesauce.
- 5 stir the wet ingredients into the dry. fold in the chia seeds.
- 6 fill muffin tins with the batter.
- 7 bake for 18 minutes.
