Lemon Chia Seed Muffins

Total Time: 28 mins Preparation Time: 10 mins Cook Time: 18 mins

Ingredients

  • 2 cups flour
  • 1 tablespoon baking powder
  • 1/4 cup sugar or 1/4 cup coconut sugar
  • 1/4 cup maple syrup
  • 1 1/2 tablespoons chia seeds
  • 1/2 teaspoon salt
  • 3/4 cup almond milk
  • 1/2 cup oil or 1/2 cup applesauce
  • 2 lemons

Recipe

  • 1 preheat oven to 350 degrees.
  • 2 place muffin liners in muffin tin. makes approximately 12 muffins.
  • 3 in a large bowl combine the flour, baking powder, salt and sugar.
  • 4 in a smaller bowl combine the maple syrup, milk, lemon juice and zest and the oil or applesauce.
  • 5 stir the wet ingredients into the dry. fold in the chia seeds.
  • 6 fill muffin tins with the batter.
  • 7 bake for 18 minutes.
