Joyce's Fabulous Fruit Cocktail Cake

Total Time: 1 hr Preparation Time: 15 mins Cook Time: 45 mins

Ingredients

  • 1 1/2 cups sugar
  • 1/4 cup oil
  • 2 eggs
  • 1 teaspoon vanilla
  • 2 cups flour
  • 1/4 teaspoon salt
  • 2 teaspoons baking soda
  • 1 (16 ounce) can fruit cocktail
  • 1/2 cup coconut
  • 1/2 cup margarine or 1/2 cup butter
  • 3/4 cup sugar
  • 1/2 cup milk
  • 1/2 cup coconut
  • 1/2 cup chopped walnuts
  • 1 teaspoon vanilla

Recipe

  • 1 beat together sugar, oil, eggs, and vanilla.
  • 2 sift together flour, salt, and baking soda.
  • 3 add fruit cocktail, mix well.
  • 4 pour in 9x13 inch pan.
  • 5 sprinkle coconut over batter.
  • 6 bake at 350 degrees for 45 minutes.
  • 7 just before removing cake from oven, bring margarine, sugar, and milk to boil in small saucepan for one minute.
  • 8 remove from heat.
  • 9 add coconut, chopped nuts, and vanilla.
  • 10 spread at once over hot cake.
