Lemony Almond Macaroons

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • 14 ounces sweetened flaked coconut
  • 1 cup sliced almonds
  • 3/4 cup sugar
  • 1 teaspoon lemon zest, grated
  • 1/4 teaspoon kosher salt
  • 4 large egg whites

Recipe

  • 1 heat oven to 325. line 2 baking sheets with parchment paper.
  • 2 in a large bowl, combine the coconut, almonds, sugar, lemon zest and salt. stir in the egg whites.
  • 3 drop mounds of the mixture (2 t. each) onto the prepared baking sheets.
  • 4 bake, switching the sheets halfway through, until the edges begin to brown, 20-25 minutes. transfer to cooling racks to cool completely.
