Fresh Fruit Salad With Coconut Cream

Ingredients

  • Servings: 4
  • 2 eggs
  • 1/4 cup sugar
  • 3/4 cup coconut milk
  • 1/2 cup half-and-half
  • 1/2 teaspoon vanilla
  • 1 pinch salt
  • 1/4 cup shredded coconut, toasted
  • kiwi, sliced
  • banana, sliced
  • orange, segmented
  • strawberry, sliced
  • blueberries

Recipe

  • 1 beat eggs and ¼ cup sugar in heavy saucepan. beat in coconut milk and half and half. stir over medium low heat till mixture thickens, about 4 min; do not boil.
  • 2 strain into small bowl. mix in vanilla and salt. cool and chill.
  • 3 arrange fresh fruit slices of your choice. spoon cream on top of fruit and sprinkle toasted coconut on cream.
