Fresh Fruit Salad With Coconut Cream

Ingredients

- 2 eggs
- 1/4 cup sugar
- 3/4 cup coconut milk
- 1/2 cup half-and-half
- 1/2 teaspoon vanilla
- 1 pinch salt
- 1/4 cup shredded coconut, toasted
- kiwi, sliced
- banana, sliced
- orange, segmented
- strawberry, sliced
- blueberries
Recipe
- 1 beat eggs and ¼ cup sugar in heavy saucepan. beat in coconut milk and half and half. stir over medium low heat till mixture thickens, about 4 min; do not boil.
- 2 strain into small bowl. mix in vanilla and salt. cool and chill.
- 3 arrange fresh fruit slices of your choice. spoon cream on top of fruit and sprinkle toasted coconut on cream.
