My Shrimp De Jonghe

Ingredients

- 1/4 cup peanut oil
- 1/2 cup flaked unsweetened coconut
- 1/4 cup breadcrumbs
- 3 tablespoons parsley (minced)
- 1 tablespoon garlic (minced)
- 3/4 teaspoon salt
- 1/4 teaspoon paprika
- 1/4 teaspoon cayenne
- 2 lbs shrimp (peeled, deviened)
- 1/2 cup dry sherry
Recipe
- 1 heat oven 400.
- 2 combine the oil, coconut, breadcrumbs, parsley, garlic, salt, paprika and cayenne.
- 3 reserve 1/4 cup. toss rest with shrimp to coat.
- 4 pour sherry in a sprayed 9x13 baking dish.
- 5 add shrimp.
- 6 scatter on remaining mix.
- 7 bake 15 minutes.
