My Shrimp De Jonghe

Total Time: 35 mins Preparation Time: 20 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 1/4 cup peanut oil
  • 1/2 cup flaked unsweetened coconut
  • 1/4 cup breadcrumbs
  • 3 tablespoons parsley (minced)
  • 1 tablespoon garlic (minced)
  • 3/4 teaspoon salt
  • 1/4 teaspoon paprika
  • 1/4 teaspoon cayenne
  • 2 lbs shrimp (peeled, deviened)
  • 1/2 cup dry sherry

Recipe

  • 1 heat oven 400.
  • 2 combine the oil, coconut, breadcrumbs, parsley, garlic, salt, paprika and cayenne.
  • 3 reserve 1/4 cup. toss rest with shrimp to coat.
  • 4 pour sherry in a sprayed 9x13 baking dish.
  • 5 add shrimp.
  • 6 scatter on remaining mix.
  • 7 bake 15 minutes.
