Ingredients

- 1 tablespoon vegetable oil
- 4 chicken breasts, cut into bite sized pieces
- 1 (10 1/2 ounce) can cream of chicken soup
- 1 (13 1/2 ounce) can coconut milk
- 1 (10 ounce) package frozen spinach, thawed and chopped
Recipe
- 1 saute the chicken in the oil until just cooked through.
- 2 add the cream of chicken soup and the coconut milk. heat until simmering.
- 3 add the spinach.
- 4 serve over steamed rice.
