Festive Coconut Cookies

Ingredients

• 16 ounces sugar cookie mix
• 2 egg whites, divided
• 1 teaspoon coconut extract
• 1 3/4 cups flaked coconut, divided
• candied red cherries, halved (optional)

Recipe

• 1 preheat oven to 375 degrees.
• 2 in a large bowl combine cookie mix, 1 egg , extract and 1/2 cup coconut.
• 3 stir until thoroughly mixed.
• 4 shape dough into 1 inch balls.
• 5 dip in remaining egg .
• 6 roll in remaining coconut.
• 7 place on ungreased cookie sheet.
• 8 if desired, press candied cherry half into center of each cookie.
• 9 bake for 8 minutes or until coconut is golden brown.
• 10 cool for 1 minute on cookie sheet.
• 11 remove to cooling rack.
