Festive Coconut Macaroons

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • 4 egg whites
  • 2/3 cup sugar
  • 1/4 cup flour
  • 1/8 teaspoon salt
  • 1/2 teaspoon almond extract
  • 4 cups coconut
  • 1/4 cup chopped candied red cherries
  • 1/4 cup chopped green glazed cherries (no mint)

Recipe

  • 1 grease and lightly flour cookie sheet.
  • 2 in a large bowl, beat egg whites till foamy.
  • 3 add sugar, flour, salt, and almond; blend well.
  • 4 stir in coconut and candied cherries.
  • 5 drop by scant tablespoonsfuls 2-inches apart on the cookie sheet.
  • 6 bake in a 325 degree oven for 13-17 minutes or till set and only lightly browned.
  • 7 remove immediately to rack.
