Lemon Coconut Loaf

Ingredients

  • 1/2 cup butter or 1/2 cup margarine, softened
  • 1 cup sugar
  • 4 1/2 teaspoons lemon juice
  • 2 eggs
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 1/4 cup flaked coconut
  • 1 teaspoon grated lemon peel
  • 1/4 cup confectioners' sugar
  • 2 tablespoons lemon juice

Recipe

  • 1 cream together butter, sugar and lemon juice.
  • 2 add the eggs, one at a time, beating well after each adition.
  • 3 combine flour, baking powder and salt; add to creamed mixture alternately with milk.
  • 4 stir in the coconut and lemon peel.
  • 5 pour into a greased 8x4x2 inch loaf pan.
  • 6 bake at 350 for 60-70 minutes or until a toothpick inserted near the center comes out clean.
  • 7 cool for 10 minutes; remove from pan to a wire rack.
  • 8 combine confectioners' sugar and 2 tablespoons lemon juice; brush over loaf.
