Lemon Coconut Loaf

Ingredients
- 1/2 cup butter or 1/2 cup margarine, softened
- 1 cup sugar
- 4 1/2 teaspoons lemon juice
- 2 eggs
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup milk
- 1/4 cup flaked coconut
- 1 teaspoon grated lemon peel
- 1/4 cup confectioners' sugar
- 2 tablespoons lemon juice
Recipe
- 1 cream together butter, sugar and lemon juice.
- 2 add the eggs, one at a time, beating well after each adition.
- 3 combine flour, baking powder and salt; add to creamed mixture alternately with milk.
- 4 stir in the coconut and lemon peel.
- 5 pour into a greased 8x4x2 inch loaf pan.
- 6 bake at 350 for 60-70 minutes or until a toothpick inserted near the center comes out clean.
- 7 cool for 10 minutes; remove from pan to a wire rack.
- 8 combine confectioners' sugar and 2 tablespoons lemon juice; brush over loaf.
