Maggie's Coconut Rice

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 1 cup long grain rice
  • 2 cups water
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 cup dried coconut

Recipe

  • 1 in a 2-quart pot bring the water and salt to a boil.
  • 2 stir in the dry rice, cinnamon, and the coconut. stir and return the water to a boil.
  • 3 reduce the heat to the lowest possible flame. place the lid on the pot and simmer for 20 minutes. do not peek while the rice is cooking.
