Filbert Fancies

Total Time: 30 mins Preparation Time: 30 mins

Ingredients

  • 1 cup shelled unblanched filberts
  • 1 beaten egg
  • 2 cups sifted powdered sugar
  • 3 tablespoons butter, softened
  • 1 teaspoon vanilla
  • 1 dash salt
  • 2 (1 ounce) unsweetened chocolate squares, melted and cooled
  • 6 ounces mini marshmallows
  • 1 cup shredded coconut

Recipe

  • 1 coarsely chop filberts; spread on baking sheet and toast at 350 until golden brown, about 10 minutes.
  • 2 cool.
  • 3 combine egg, sugar, butter, vanilla and salt.
  • 4 beat until very light and fluffy.
  • 5 blend in chocolate.
  • 6 combine marshmallows and filberts; fold in chocolate mixture.
  • 7 drop from teaspoon into bowl of coconut; roll evenly to coat.
  • 8 place on waxed paper.
  • 9 let stand until set.
