Festive Rice

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 2
  • 2 2/3 cups jasmine rice
  • 4 tablespoons oil
  • 2 garlic cloves, crushed
  • 2 onions, sliced
  • 1/2 teaspoon ground turmeric
  • 3 cups water
  • 14 ounces coconut milk
  • 1 lemongrass, stalk
  • red chile
  • cucumber, wedges
  • tomato, chunks

Recipe

  • 1 rinse jasmine rice thoroughly under cold water in a large strainer.
  • 2 heat oil in a large frying pan with a lid. cook the garlic, onion, and turmeric over low heat for 2-3 minutes until the onions have softened. add the rice and stir well to coat in oil.
  • 3 pour in the coconut milk and water and add the lemon grass. bring to a boil and cook gently until all the liquid has been absorbed by the rice, about 12 minutes.
  • 4 remove pan from heat and leave for 15 minutes.
  • 5 remove lemongrass stalk and transfer to a serving platter, add garnishes.
