Ingredients

- 4 tablespoons margarine or 4 tablespoons butter
- 3 large egg yolks
- 1/2 cup sugar
- 2 tablespoons milk
- 1 teaspoon baking powder
- 1 tablespoon cornstarch
- 1 cup flour
- 1/2 teaspoon salt
- 1 teaspoon vanilla
- 1 cup raspberry preserves
- 3 large egg whites
- 1/2 cup sugar
- 1 cup flaked coconut
Recipe
- 1 cream together margarine or butter and sugar.
- 2 beat in egg yolks.
- 3 stir in milk and vanilla.
- 4 sift together dry ingredients and beat in, mixing well, until smooth.
- 5 grease and flour an 8 x 8" square pan.
- 6 spread batter in prepared pan.
- 7 bake at 350°f for 20 minutes until top springs back when gently touched.
- 8 spread hot cake with raspberry preserves.
- 9 beat 3 egg whites stiff with 1/2 cup sugar.
- 10 spread on top of preserves.
- 11 sprinkle with coconut.
- 12 return to oven and bake until golden.
- 13 cool, cut into squares to serve.
