Deep Fried Peaches

Ingredients

- 6 peaches, blanched and peeled
- 1/4 cup flour
- 1 1/4 cups flour
- 4 teaspoons sugar
- 4 teaspoons shredded coconut
- 4 teaspoons graham cracker crumbs
- 1 teaspoon cinnamon
- 1/2 teaspoon ginger
- 2 teaspoons double-acting baking powder
- 1 teaspoon salt
- 1 egg
- 1 -1 1/3 cup milk
- canola oil
Recipe
- 1 take blanched, peeled peaches and roll in the 1/4 cup flour.
- 2 combine the remaining flour, sugar, coconut, cracker crumbs, cinnamon, ginger, baking powder and salt in a large bowl.
- 3 in a smaller bowl combine the egg and 1 cup of milk.
- 4 fork into the the flour mixture.
- 5 if the batter is to thick add a bit of milk.
- 6 pour oil into a large, deep saucepan so that its around 3 to 4 inches deep-heat to medium high.
- 7 dip peaches in the batter and then into hot oil.
- 8 fry for 3 minutes or until golden brown.
- 9 the pan should hold 3 at a time without touching.
