Cocoa Banana Mini Muffins

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • Servings: 36
  • 1 1/4 cups quinoa flour
  • 1 cup quick-cooking rolled oats
  • 1/2 cup light brown sugar
  • 1/3 cup unsweetened cocoa powder
  • 1 1/4 teaspoons baking powder 1/2 t baking soda
  • 1/4 teaspoon fine sea salt
  • 2 large eggs
  • 2/3 cup mashed ripe banana
  • 1/2 cup soymilk
  • 1/4 cup coconut oil (or melted butter)
  • 1 teaspoon vanilla extract
  • 2 tablespoons icing sugar

Recipe

  • 1 preheat oven to 400*.
  • 2 in large bowl, combine dry ingredients.
  • 3 in medium bowl, whisk together eggs, bananas, milk, oil and vanilla until well blended.
  • 4 combine egg and flour mixture and stir until just combined.
  • 5 divide batter evenly among prepared mini muffin cups.
  • 6 bake 10-12 minutes. let cool and sprinkle with icing sugar.
