Cocoa Banana Mini Muffins

Ingredients
- Servings: 36
- 1 1/4 cups quinoa flour
- 1 cup quick-cooking rolled oats
- 1/2 cup light brown sugar
- 1/3 cup unsweetened cocoa powder
- 1 1/4 teaspoons baking powder 1/2 t baking soda
- 1/4 teaspoon fine sea salt
- 2 large eggs
- 2/3 cup mashed ripe banana
- 1/2 cup soymilk
- 1/4 cup coconut oil (or melted butter)
- 1 teaspoon vanilla extract
- 2 tablespoons icing sugar
Recipe
- 1 preheat oven to 400*.
- 2 in large bowl, combine dry ingredients.
- 3 in medium bowl, whisk together eggs, bananas, milk, oil and vanilla until well blended.
- 4 combine egg and flour mixture and stir until just combined.
- 5 divide batter evenly among prepared mini muffin cups.
- 6 bake 10-12 minutes. let cool and sprinkle with icing sugar.
