Gluten Free Dairy Free Muffins Mix

Ingredients

  • 2 cups rice flour
  • 1/2 cup coconut flour
  • 2 cups sweet rice flour
  • 1 cup tapioca flour
  • 2 teaspoons baking soda
  • 8 teaspoons baking powder
  • 1 1/2 teaspoons sea salt
  • 2 teaspoons xanthan gum
  • 2/3 cup splenda sugar substitute

Recipe

  • 1 combine ingredients in a large bowl and mix well with wire whisk.
  • 2 store mix in airtight container.
  • 3 to make 12 muffins.
  • 4 2 cups flour mix.
  • 5 4 eggs.
  • 6 5 tablespoons extra light olive oil.
  • 7 1- 8 ounce can crushed pineapple.
  • 8 5 tablespoons apple juice.
  • 9 1 teaspoon vanilla.
  • 10 2 to 3 cups any combination of chopped dried fruit, nuts and seeds you wish. ie:dried apricots, dates, raisins, dried cranberries, currants, coconut, flax seeds, sunflower seeds, walnuts,pecans, etc.
  • 11 put 2 cups flour mix in large bowl and set aside.
  • 12 beat eggs in medium bowl and add remaining wet ingredients. mix well.
  • 13 add fruit and nuts, mix well to combine and stir well into dry ingredients.
  • 14 scoop into greased or paper lined muffin cups with 1/4 cup measure.
  • 15 bake at 350°f 20 to 23 minutes or till toothpick comes out clean.
  • 16 remove from pans right away and cool on wire rack.
  • 17 enjoy.
