Healthy Raisin Coconut Muffins

Ingredients
- 1 1/4 cups whole wheat flour
- 1 cup wheat bran
- 1/2 cup brown sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 3/4 cup milk
- 1/4 cup applesauce
- 1 large egg
- 1 teaspoon vanilla
- 2 large ripe bananas, peeled and chopped
- 1/2 cup raisins
- 1/3 cup sweetened coconut
Recipe
- 1 preheat oven to 400°f and line 12-15 muffin cups with liners.
- 2 mix the first 6 ingredients in a large bowl.
- 3 add in the remaining ingredients and mix well.
- 4 spoon batter into muffin cups.
- 5 bake for 20 minutes or until toothpick comes out clean.
- 6 cool on wire rack.
