Chicken Adobo

Total Time: 2 hrs Preparation Time: 2 hrs

Ingredients

  • Servings: 4
  • 3 lbs chicken thighs
  • 1 1/2 cups apple cider vinegar
  • 6 tablespoons minced garlic
  • 1/2 cup soy sauce
  • 1 teaspoon ground pepper
  • 2 bay leaves
  • 1 tablespoon peppercorn
  • 1 tablespoon brown sugar (optional)
  • 1 (12 ounce) can coconut milk
  • salt

Recipe

  • 1 combine all ingredients in pan and
  • 2 marinate for 2 hours.
  • 3 simmer until chicken is tender.
  • 4 separate chicken from sauce.
  • 5 broil or grill chicken until brown.
  • 6 reduce sauce to half.
  • 7 pour over chicken.
