Coco Cherry Chicken

Ingredients

- 4 boneless skinless chicken breast halves
- 1 tablespoon cornstarch
- 2 tablespoons lemon juice
- 2 1/2 cups dark sweet cherries, pitted
- 1/3 cup flour
- 1/2 ground cinnamon
- 1/2 ground allspice
- 1/2 cup water
- 1/4 cup coconut, shredded & toasted
Recipe
- 1 stir together cornstarch and lemon juice; stir in cherries.
- 2 combine flour and spices in a bag; add chicken and shake to coat.
- 3 brown chicken over medium-high heat in skillet sprayed with nonstick cooking spray.
- 4 add water, reduce heat; cover and simmer about 20 minutes or until chicken is tender. remove chicken from pan and cover with foil.
- 5 remove all but 1 tbsp drippings from pan; add cherry mixture and bring to a boil. cook until sauce thickens. place chicken onto serving plates, pour cheery sauce over chicken and top with coconut.
