Coco Cherry Chicken

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 4 boneless skinless chicken breast halves
  • 1 tablespoon cornstarch
  • 2 tablespoons lemon juice
  • 2 1/2 cups dark sweet cherries, pitted
  • 1/3 cup flour
  • 1/2 ground cinnamon
  • 1/2 ground allspice
  • 1/2 cup water
  • 1/4 cup coconut, shredded & toasted

Recipe

  • 1 stir together cornstarch and lemon juice; stir in cherries.
  • 2 combine flour and spices in a bag; add chicken and shake to coat.
  • 3 brown chicken over medium-high heat in skillet sprayed with nonstick cooking spray.
  • 4 add water, reduce heat; cover and simmer about 20 minutes or until chicken is tender. remove chicken from pan and cover with foil.
  • 5 remove all but 1 tbsp drippings from pan; add cherry mixture and bring to a boil. cook until sauce thickens. place chicken onto serving plates, pour cheery sauce over chicken and top with coconut.
