Coconut-lime Sorbet

Ingredients
- Servings: 12
- 1 cup coconut water
- 1 cup sugar
- 2 cups unsweetened coconut milk
- 1/4 cup freshly-squeezed lime juice
Recipe
- 1 combine coconut water and sugar in small saucepan over low heat; stir until sugar dissolves.
- 2 remove from heat, and allow to cool completely.
- 3 stir in the coconut milk and lime juice; cover and refrigerate until cold.
- 4 stir the chilled mixture, then freeze in ice cream maker according to manufacturers instructions.
- 5 for a firmer sorbet, transfer to freezer-safe container, and freeze at least 2 hours.
