Coconut-lime Sorbet

Ingredients

  • Servings: 12
  • 1 cup coconut water
  • 1 cup sugar
  • 2 cups unsweetened coconut milk
  • 1/4 cup freshly-squeezed lime juice

Recipe

  • 1 combine coconut water and sugar in small saucepan over low heat; stir until sugar dissolves.
  • 2 remove from heat, and allow to cool completely.
  • 3 stir in the coconut milk and lime juice; cover and refrigerate until cold.
  • 4 stir the chilled mixture, then freeze in ice cream maker according to manufacturer’s instructions.
  • 5 for a firmer sorbet, transfer to freezer-safe container, and freeze at least 2 hours.
