Easy Hawaiian Cake With Icing

Total Time: 55 mins Preparation Time: 10 mins Cook Time: 45 mins

Ingredients

  • Servings: 18
  • 2 cups flour
  • 2 cups sugar (i use 1 and 3/4)
  • 2 eggs
  • 2 teaspoons baking soda
  • 1 (20 ounce) can undrained crushed pineapple
  • 1 cup coconut
  • 1 cup chopped nuts (optional)
  • 1/2 cup powdered sugar
  • 1/2 cup margarine or 1/2 cup butter
  • 1 (8 ounce) package cream cheese
  • 2 teaspoons vanilla

Recipe

  • 1 for cake: mix all ingredients together by hand.
  • 2 pour into greased 9x13x2 inch pan.
  • 3 if using glass pan, bake at 325 degrees.
  • 4 otherwise, bake at 350 degrees for 45 minutes.
  • 5 check for doneness using toothpick.
  • 6 for icing: mix all ingredients together and frost cool cake.
  • 7 keep in refrigerator.
  • 8 will keep for a long time.
