- 1 lb diced chicken breast
- 1 tablespoon cornstarch
- 1 1/3 cups chicken broth
- 1/2 cup sliced carrot
- 1/2 cup coconut milk
- 2 teaspoons cumin
- 1 teaspoon curry powder
- 1/2 teaspoon cinnamon
- 1/4 teaspoon red pepper
- salt
Recipe
- 1 toss chicken and cornstarch together. brown chicken in skillet. add remaining ingredients and simmer until carrots are tender. serve over rice.
