Mounds Coconut Cream Pie

Total Time: 13 mins Preparation Time: 10 mins Cook Time: 3 mins

Ingredients

  • 2/3 cup granulated sugar
  • 1/3 cup cornstarch
  • 2 tablespoons flour
  • 1/4 teaspoon salt
  • 3 eggs
  • 3 cups milk
  • 1 tablespoon butter
  • 2 teaspoons vanilla
  • 1 1/4 cups mound coconut
  • 1 baked 9 inch pie shell, cooled
  • whipped topping (optional)
  • toasted coconut (optional)

Recipe

  • 1 combine the first 6 ingredients in a saucepan.
  • 2 slowly bring to a boil whisking constantly.
  • 3 continue to boil for 1 minute.
  • 4 remove from heat.
  • 5 stir in butter, vanilla, and coconut.
  • 6 pour into prepared crust.
  • 7 cover with plastic wrap and chill for at least 8 hours in the fridge.
