Mango Colada Chicken With Ginger Fruit

Ingredients

  • Servings: 6
  • 12 medium chicken thighs, skinned
  • 1 1/2 cups cubed under-ripe mangoes
  • 1/4 cup rum
  • 2 tablespoons sweetened coconut cream
  • 1/4 cup soy sauce
  • 1 teaspoon grated gingerroot
  • 1 teaspoon allspice
  • curly lettuce leaf
  • 1 tablespoon toasted sesame seeds
  • 4 tablespoons sweetened coconut cream
  • 1/2 teaspoon grated gingerroot
  • 2 cups ripe mangoes, peeled and cubed
  • 1 pint strawberry, hulled
  • 2 cups red seedless grapes

Recipe

  • 1 for chicken: preheat oven to 400°f.
  • 2 in a food processor, puree the mango. add rum, coconut cream, soy sauce, gingerroot and allspice.
  • 3 coat chicken with mango puree mixture and place in a baking dish.
  • 4 bake, uncovered, for 50 minutes or until fork-tender, turning frequently. (increase heat to reduce liquid if necessary toward the end of cooking.).
