Mango Colada Chicken With Ginger Fruit

Ingredients

- 12 medium chicken thighs, skinned
- 1 1/2 cups cubed under-ripe mangoes
- 1/4 cup rum
- 2 tablespoons sweetened coconut cream
- 1/4 cup soy sauce
- 1 teaspoon grated gingerroot
- 1 teaspoon allspice
- curly lettuce leaf
- 1 tablespoon toasted sesame seeds
- 4 tablespoons sweetened coconut cream
- 1/2 teaspoon grated gingerroot
- 2 cups ripe mangoes, peeled and cubed
- 1 pint strawberry, hulled
- 2 cups red seedless grapes
Recipe
- 1 for chicken: preheat oven to 400°f.
- 2 in a food processor, puree the mango. add rum, coconut cream, soy sauce, gingerroot and allspice.
- 3 coat chicken with mango puree mixture and place in a baking dish.
- 4 bake, uncovered, for 50 minutes or until fork-tender, turning frequently. (increase heat to reduce liquid if necessary toward the end of cooking.).
