Mango Bread The Panama Way

Ingredients
- 2 cups flour
- 2 teaspoons baking soda
- 1/2 teaspoon salt
- 2 teaspoons cinnamon
- 1 -1 1/2 cup sugar
- 3 eggs
- 1/2 cup canola oil
- 1 teaspoon vanilla
- 1/2 cup macadamia nuts, chopped
- 1/2 cup golden raisin
- 1 -1 1/2 cup fresh mango, diced
- 1/4 cup flaked coconut, unsweetened
Recipe
- 1 sift flour, baking soda, salt, cinnamon and sugar in a large bowl.
- 2 make a well in center of dry ingredients and then add the eggs, oil, and vanilla and blend well.
- 3 gently stir in the nuts, raisins, mango and coconut.
- 4 pour into greased loaf pan and let stand 20 minutes.
- 5 bake at 350 degrees for 1 hour to 1 hr and 15 minutes or until done (verifying with a toothpick test in the center).
- 6 let stand 10 minutes before removing from pan and allowing to cool completely on a wire rack before serving/cutting.
