Mango Beef Stir Fry - Weight Watcher Freindly

Total Time: 35 mins Preparation Time: 20 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 1/2 cup coconut milk
  • 1/4 cup hoisin sauce
  • 3 tablespoons brown sugar
  • 2 tablespoons fish sauce
  • 1 tablespoon peanut butter
  • 1 tablespoon water
  • 2 teaspoons cornstarch
  • 1 1/2 teaspoons garlic, minced
  • 1 teaspoon ginger, minced
  • 12 ounces steak (siroin, rib eye, or new york strip)
  • 2 teaspoons vegetable oil
  • 1 1/2 cups onions, sliced
  • 2 cups red peppers, sliced
  • 1 mango, diced
  • 1/4 cup cilantro, chopped
  • 3 tablespoons green onions

Recipe

  • 1 sauce: in a bowl, mix sauce ingredients together until smooth, set aside.
  • 2 preheat grill: grill beef on high until medium rare, about 5 - 8 minutes. slice steak thinly and keep covered.
  • 3 stir fry: in a large wok, heat oil over medium heat; stir fry onions for about 5 minutes or until softened. add peppers; stir fry for 3 minutes. add sauce to veggies and stir fry for 2 minutes or until sauce thickens, add beef , mango, cilantro and onions at the end just to coat.
  • 4 serve over a bed of rice.
