Mango Beef Stir Fry - Weight Watcher Freindly

Ingredients

- 1/2 cup coconut milk
- 1/4 cup hoisin sauce
- 3 tablespoons brown sugar
- 2 tablespoons fish sauce
- 1 tablespoon peanut butter
- 1 tablespoon water
- 2 teaspoons cornstarch
- 1 1/2 teaspoons garlic, minced
- 1 teaspoon ginger, minced
- 12 ounces steak (siroin, rib eye, or new york strip)
- 2 teaspoons vegetable oil
- 1 1/2 cups onions, sliced
- 2 cups red peppers, sliced
- 1 mango, diced
- 1/4 cup cilantro, chopped
- 3 tablespoons green onions
Recipe
- 1 sauce: in a bowl, mix sauce ingredients together until smooth, set aside.
- 2 preheat grill: grill beef on high until medium rare, about 5 - 8 minutes. slice steak thinly and keep covered.
- 3 stir fry: in a large wok, heat oil over medium heat; stir fry onions for about 5 minutes or until softened. add peppers; stir fry for 3 minutes. add sauce to veggies and stir fry for 2 minutes or until sauce thickens, add beef , mango, cilantro and onions at the end just to coat.
- 4 serve over a bed of rice.
