lemon coconut pound cake

Ingredients

  • Servings: 12
  • 1 cup butter, softened
  • 1/2 cup butter flavor shortening
  • 3 cups sugar
  • 6 eggs
  • 1 teaspoon lemon juice
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon coconut extract
  • 3 cups flour
  • 1 cup eggnog
  • 1 cup flaked coconut
  • 1 1/2 cups confectioners' sugar
  • 2 tablespoons milk
  • 1 teaspoon lemon juice

Recipe

  • 1 preheat oven to 325 grease and flour a 10" tube pan in a large bowl beat sugar, butter and shortening until fluffy add eggs one at a time, beating after each addition add lemon juice and extracts add flour and eggnog, beating well stir in coconut pour into prepared pan and bake for 1 hr 15 minsuntil done cool for 10 minutes turn out to a wire rack, cool completely for glaze, mix together the ingredients and drizzle over cake.
