Governor Dalton's Favorite Coconut Bars

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • 1 cup flour
  • 1 1/2 cups brown sugar
  • 1 teaspoon vanilla
  • 1/2 teaspoon baking powder
  • 1/2 cup angel flake coconut
  • 1/2 cup butter
  • 2 eggs
  • 2 tablespoons flour
  • 1/4 teaspoon salt
  • 1 cup pecans, chopped

Recipe

  • 1 sift flour before measuring.
  • 2 cream butter with ½ cup brown sugar.
  • 3 add 1 cup flour. mix to crumbly mass.
  • 4 pat it evenly into 9x9 well-greased pan. bake this pastry until delicately brown at 300°, 20 minute
  • 5 remove from oven.
  • 6 beat eggs until light.
  • 7 add 1 cup brown sugar and vanilla.
  • 8 mix well.
  • 9 add 2 teaspoons flour which has been sifted with baking powder and salt.
  • 10 add coconut and nuts.
  • 11 spread over pastry and bake at 350°, 25 minute.
  • 12 cool and cut into bars.
