Coconut-orange Fudge Truffles

Total Time: 1 hr 20 mins Preparation Time: 1 hr Cook Time: 20 mins

Ingredients

  • 2 tablespoons butter
  • 2/3 cup evaporated milk
  • 1 2/3 cups sugar
  • 1/2 teaspoon salt
  • 2 cups marshmallows
  • 1 1/2 cups semi-sweet chocolate chips
  • 1 teaspoon vanilla
  • 1 -2 tablespoon orange extract or 1 -2 tablespoon orange flavoring
  • 1 cup shredded coconut

Recipe

  • 1 put butter, milk, sugar, and salt in a saucepan over medium heat and bring to a boil.
  • 2 boil for 5 minutes, stirring continually; remove from heat.
  • 3 add remaining ingredients, reserving 1/3 cup coconunt, and stir to mix.
  • 4 beat with a spoon for one minute or until marshmallows and chocolate are melted.
  • 5 pour into a well greased 8"x8" pan.
  • 6 cool until no longer sticky, then form into 8 rolls.
  • 7 when rolls harden slightly, cut each into 8 equal pieces, then roll each piece into a ball.
  • 8 roll each ball in the reserved coconut to coat.
  • 9 let stand to harden a bit more before serving.
