Good-for-you Granola Bars

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • 1/2 cup honey
  • 1 cup natural-style peanut butter, unsalted
  • 1/4 cup canola oil
  • 2 teaspoons vanilla extract
  • 1 egg
  • 1 1/2 cups flax seed meal
  • 2 teaspoons cinnamon
  • 1/4-1/2 teaspoon salt
  • 1/2 cup sunflower seeds
  • 1/2 cup flaked coconut
  • 1/2 cup raisins
  • 1/2 cup dried cranberries
  • 1/2 cup chopped almonds
  • 1/2 cup chopped pecans
  • 2 cups old fashioned oats

Recipe

  • 1 preheat oven to 350 degrees.
  • 2 combine honey, peanut butter, oil, vanilla, and egg in large bowl and mix well.
  • 3 add flaxseed meal, cinnamon, salt and mix well.
  • 4 add remaining ingredients and mix till it is all combined.
  • 5 press into a 13x9-inch baking pan that has been sprayed with non-stick cooking spray (or line the pan with foil and spray the foil).
  • 6 bake for 25-35 minutes, until the edges are beginning to brown.
  • 7 let cool completely, transfer to cutting board and cut into bars.
