Coconut/egg Pie (quindim)

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 6
  • 1 cup granulated sugar
  • 1 cup shredded coconut
  • 1 tablespoon butter
  • 5 egg yolks
  • 1 egg , stiffly beaten

Recipe

  • 1 preheat your oven to 350f.
  • 2 in the bowl of your electric mixer, combine the sugar, coconut and butter.
  • 3 gradually add the egg yolks, one at a time.
  • 4 lastly, fold in the beaten egg .
  • 5 pour the mixture into a 9-inch pie plate.
  • 6 place this in a roasting pan and fill with boiling water to half way up the pie dish.
  • 7 bake for 30 minutes or until set and golden brown.
  • 8 turn the pie out on a serving dish.
  • 9 you want to present it upside down (ie. the browned coconut will form the base).
  • 10 refrigerate.
