Baked Beets With Fennel And Orange

Total Time: 50 mins Preparation Time: 10 mins Cook Time: 40 mins

Ingredients

  • Servings: 4
  • 1 tablespoon coconut oil
  • 2 large beets
  • 1 fennel bulb
  • 1/2 orange

Recipe

  • 1 preheat oven to 375°f (190°c). melt coconut oil in a small pan.
  • 2 peel the beets and cut them into bite sized chunks.thinly slice the fennel. but the orange segments into bite sized pieces.
  • 3 pour the melted coconut over all. stir to thoroughly coat. pour the mixture into a baking pan and bake for 30-40 minutes, or until the beets are fork tender.
