- 1 tablespoon coconut oil
- 2 large beets
- 1 fennel bulb
- 1/2 orange
Recipe
- 1 preheat oven to 375°f (190°c). melt coconut oil in a small pan.
- 2 peel the beets and cut them into bite sized chunks.thinly slice the fennel. but the orange segments into bite sized pieces.
- 3 pour the melted coconut over all. stir to thoroughly coat. pour the mixture into a baking pan and bake for 30-40 minutes, or until the beets are fork tender.
