Health Cake

Ingredients
- 1 cup canola oil
- 1 cup chopped nuts
- 1 cup any dried fruit or 1 cup raisins or 1 cup dates or 1 cup dried cranberries
- 1 cup coconut
- 2 cups rolled oats
- 3 cups crushed fruit, pulp and juice (you can use bananas, strawberries, peaches, mangoes, pineapple, applesauce etc.)
- 1/2 teaspoon salt
- 1 teaspoon vanilla
- 1/2 teaspoon cinnamon
- 2 -2 1/2 cups whole wheat flour
Recipe
- 1 preheat oven to 350.
- 2 mix all ingredients to gether to form soft slightly crumbly dough.
- 3 press or spread into 2 round, greased cake pans.
- 4 bake in 350 oven for 40-50 minutes until sides and bottom are golden brown.
- 5 take a peek.
- 6 remove from oven and let cool in pan for 10 minutes.
- 7 turn out onto plate or board for further cooling.
- 8 this cake freezes very well, so eat one and freeze one.
