Health Cake

Total Time: 1 hr 25 mins Preparation Time: 35 mins Cook Time: 50 mins

Ingredients

  • 1 cup canola oil
  • 1 cup chopped nuts
  • 1 cup any dried fruit or 1 cup raisins or 1 cup dates or 1 cup dried cranberries
  • 1 cup coconut
  • 2 cups rolled oats
  • 3 cups crushed fruit, pulp and juice (you can use bananas, strawberries, peaches, mangoes, pineapple, applesauce etc.)
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla
  • 1/2 teaspoon cinnamon
  • 2 -2 1/2 cups whole wheat flour

Recipe

  • 1 preheat oven to 350.
  • 2 mix all ingredients to gether to form soft slightly crumbly dough.
  • 3 press or spread into 2 round, greased cake pans.
  • 4 bake in 350 oven for 40-50 minutes until sides and bottom are golden brown.
  • 5 take a peek.
  • 6 remove from oven and let cool in pan for 10 minutes.
  • 7 turn out onto plate or board for further cooling.
  • 8 this cake freezes very well, so eat one and freeze one.
