Grapefruit Ambrosia

Ingredients

  • Servings: 4
  • 5 lbs grapefruits
  • 1 cup sweetened flaked coconut
  • 2 tablespoons campari
  • 2 tablespoons sugar
  • salt

Recipe

  • 1 cut peel from each fruit with a sharp paring knife (including all pith).
  • 2 cut each segment from each fruit free from membranes.
  • 3 halve grapefruit segments crosswise and transfer pieces to a bowl.
  • 4 stir in coconut, campari, sugar, and just a pinch of salt.
  • 5 refrigerate, covered, at least 15 minutes or up to 4 hours.
