Grapefruit Ambrosia

Ingredients
- Servings: 4
- 5 lbs grapefruits
- 1 cup sweetened flaked coconut
- 2 tablespoons campari
- 2 tablespoons sugar
- salt
Recipe
- 1 cut peel from each fruit with a sharp paring knife (including all pith).
- 2 cut each segment from each fruit free from membranes.
- 3 halve grapefruit segments crosswise and transfer pieces to a bowl.
- 4 stir in coconut, campari, sugar, and just a pinch of salt.
- 5 refrigerate, covered, at least 15 minutes or up to 4 hours.
