Freezer Date Cookies

Total Time: 30 mins Preparation Time: 5 mins Cook Time: 25 mins

Ingredients

  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup pitted dates, chopped
  • 1 cup shredded coconut
  • 1 cup walnuts, chopped

Recipe

  • 1 with an electric mixer, beat butter, egg and vanilla until smooth.
  • 2 in separate bowl, whisk together flour, baking powder and salt.
  • 3 gradually add flour mixture to butter mixture, beating until blended.
  • 4 stir in dates, coconut and walnuts.
  • 5 form dough into two 1-1/2-inch rolls; wrap in wax paper or foil.
  • 6 chill in freezer until firm enough to slice easily (about 2 hours) or for as long as 1 month.
  • 7 when ready to make, preheat oven to 350 degrees fahrenheit.
  • 8 lightly grease several cookie sheets.
  • 9 with sharp knife, cut rolls into 3/8-inch slices.
  • 10 place slices on prepared cookie sheets.
  • 11 bake about 12 minutes or until golden.
