Maple Vanilla Cashew Granola

Total Time: 1 hr 10 mins Preparation Time: 10 mins Cook Time: 1 hr

Ingredients

  • 6 cups rolled oats
  • 3 cups puffed rice cereal
  • 1 1/4 cups cashews
  • 4 tablespoons coconut oil, melted
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 cup raisins
  • 1/2 cup dried cranberries, sweetened with fruit juice

Recipe

  • 1 preheat oven to 300 degrees.
  • 2 in a large mixing bowl, combine oats, puffed rice, cashews, coconut oil, maple syrup, and vanilla extract.
  • 3 spread mixture into large glass pyrex dish or large cookie sheet.
  • 4 cook for 60 minutes, stirring mixture every 15 minutes. at the 45 minute mark, mix in raisins and dried cranberries.
  • 5 let cool thoroughly before storing in containers. enjoy with fresh fruit and homemade almond milk or rice milk!
