Maple Vanilla Cashew Granola

Ingredients
- 6 cups rolled oats
- 3 cups puffed rice cereal
- 1 1/4 cups cashews
- 4 tablespoons coconut oil, melted
- 1/4 cup maple syrup
- 1 teaspoon vanilla extract
- 1/2 cup raisins
- 1/2 cup dried cranberries, sweetened with fruit juice
Recipe
- 1 preheat oven to 300 degrees.
- 2 in a large mixing bowl, combine oats, puffed rice, cashews, coconut oil, maple syrup, and vanilla extract.
- 3 spread mixture into large glass pyrex dish or large cookie sheet.
- 4 cook for 60 minutes, stirring mixture every 15 minutes. at the 45 minute mark, mix in raisins and dried cranberries.
- 5 let cool thoroughly before storing in containers. enjoy with fresh fruit and homemade almond milk or rice milk!
