Italian Cream Cake

Ingredients
- 1 cup buttermilk
- 1 teaspoon baking soda
- 2 cups sugar
- 1/2 cup butter
- 1/2 cup shortening
- 5 eggs, separated
- 2 cups sifted flour
- 1 teaspoon vanilla
- 1 (3 1/2 ounce) can coconut
- 1 cup chopped pecans
Recipe
- 1 mix buttermilk and baking soda. let stand for a few minutes.
- 2 cream together sugar, butter and shortening.
- 3 add egg yolks, mixing well between each yolk.
- 4 add milk mixture and flour gradually, alternating between each one.
- 5 add vanilla, nuts and coconut. beat well.
- 6 in separate bowl, beat egg whites until stiff. carefully fold into batter.
- 7 pour into 3 well-greased 9" cake pans.
- 8 bake st 325º for 25 minutes or until toothpick comes out clean.
- 9 cool and frost with cream cheese icing.
