Italian Cream Cake

Total Time: 40 mins Preparation Time: 15 mins Cook Time: 25 mins

Ingredients

  • 1 cup buttermilk
  • 1 teaspoon baking soda
  • 2 cups sugar
  • 1/2 cup butter
  • 1/2 cup shortening
  • 5 eggs, separated
  • 2 cups sifted flour
  • 1 teaspoon vanilla
  • 1 (3 1/2 ounce) can coconut
  • 1 cup chopped pecans

Recipe

  • 1 mix buttermilk and baking soda. let stand for a few minutes.
  • 2 cream together sugar, butter and shortening.
  • 3 add egg yolks, mixing well between each yolk.
  • 4 add milk mixture and flour gradually, alternating between each one.
  • 5 add vanilla, nuts and coconut. beat well.
  • 6 in separate bowl, beat egg whites until stiff. carefully fold into batter.
  • 7 pour into 3 well-greased 9" cake pans.
  • 8 bake st 325º for 25 minutes or until toothpick comes out clean.
  • 9 cool and frost with cream cheese icing.
