Coconut Spinach

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 4 ounces bacon, diced
  • 3 teaspoons garlic, diced
  • 1 small red onion, thinly sliced
  • 2 lbs fresh baby spinach
  • 1/2 cup coconut milk, unsweetened
  • 2 teaspoons cayenne pepper, ground
  • 1/2 teaspoon sea salt
  • 1/8 teaspoon black pepper, cracked

Recipe

  • 1 brown bacon in a saute pan until just crisp.
  • 2 add onion and saute until translucent.
  • 3 add garlic and saute, just until lightly golden.
  • 4 add spinach, tossing until just wilted.
  • 5 add milk, cayenne pepper, salt and pepper.
  • 6 stir until incorporated. plate.
