Coconut Spinach

Ingredients

- 4 ounces bacon, diced
- 3 teaspoons garlic, diced
- 1 small red onion, thinly sliced
- 2 lbs fresh baby spinach
- 1/2 cup coconut milk, unsweetened
- 2 teaspoons cayenne pepper, ground
- 1/2 teaspoon sea salt
- 1/8 teaspoon black pepper, cracked
Recipe
- 1 brown bacon in a saute pan until just crisp.
- 2 add onion and saute until translucent.
- 3 add garlic and saute, just until lightly golden.
- 4 add spinach, tossing until just wilted.
- 5 add milk, cayenne pepper, salt and pepper.
- 6 stir until incorporated. plate.
