Coconut-orange-pineapple Ice Cream Pie

Ingredients
- Servings: 8
- 1 shortbread pie crusts or 1 graham cracker pie crust
- 1 (8 ounce) container of cool whip fat-free whipped topping
- 1/2 cup of drained crushed pineapple
- 1/4 cup unsweetened dried shredded coconut
- 2 -3 drops orange extract (or to taste)
- 2 -3 drops orange food coloring (or to desired shade)
Recipe
- 1 put the cool whip fat free whipped topping into a bowl.
- 2 fold in extract and food coloring. do not beat. you do not want to deflate the whipped topping.
- 3 fold until well blended.
- 4 fold in coconut and pineapple.
- 5 pour into pie shell and freeze.
