Coconut-orange-pineapple Ice Cream Pie

Ingredients

  • Servings: 8
  • 1 shortbread pie crusts or 1 graham cracker pie crust
  • 1 (8 ounce) container of cool whip fat-free whipped topping
  • 1/2 cup of drained crushed pineapple
  • 1/4 cup unsweetened dried shredded coconut
  • 2 -3 drops orange extract (or to taste)
  • 2 -3 drops orange food coloring (or to desired shade)

Recipe

  • 1 put the cool whip fat free whipped topping into a bowl.
  • 2 fold in extract and food coloring. do not beat. you do not want to deflate the whipped topping.
  • 3 fold until well blended.
  • 4 fold in coconut and pineapple.
  • 5 pour into pie shell and freeze.
