Coconut-lemon Squares

Ingredients
- 1/2 cup butter, softened
- 1 1/2 cups firmly packed light brown sugar, divided
- 1 cup flour, plus
- 2 tablespoons flour
- 1 teaspoon salt, divided
- 2 eggs, lightly beaten
- 1 teaspoon vanilla extract
- 1 1/4 cups coconut
- 1/2 cup chopped pecans
- 1/4 cup butter, softened
- 1 1/2 cups powdered sugar
- 2 teaspoons grated lemons, rind of
- 2 tablespoons lemon juice
Recipe
- 1 cream butter and 1/2 cup light brown sugar until light and fluffy.
- 2 add 1 cup flour and 1/2 tsp salt, mixing well.
- 3 press mixture evenly into a 9x13 pan and bake at 350 for 12-15 minutes.
- 4 combine remaining ingredients in small mixing bowl.
- 5 spread evenly over baked mixture.
- 6 bake at 350 for 20 minutes or until light brown.
- 7 let cool slightly.
- 8 beat butter and powdered sugar until well mixed.
- 9 add lemon juice and lemon peel, mixing well.
- 10 spread lemon frosting on top.
- 11 cut into squares.
