Coconut-almond Dreams

Total Time: 18 mins Preparation Time: 15 mins Cook Time: 3 mins

Ingredients

  • 1/3 cup brown rice syrup
  • 1 cup shredded coconut, not sweetened
  • 24 whole almonds
  • 1 cup semi-sweet chocolate chips, melted

Recipe

  • 1 heat the brown rice syrup in a saucepan on medium heat. it will go from thick to liquidy to bubbly very fast. allow it to boil for about 2 minutes.
  • 2 pour the coconut into the syrup and stir until combined. remove from stove.
  • 3 line a 24 cup mini muffin pan with mini muffin cups. put about a teaspoon of the coconut mixture in each cup and pack it down.
  • 4 push an almond into each coconut ball.
  • 5 pour the chocolate over each candy until you can't see the coconut anymore.
  • 6 place in the freezer for 5 minutes until set.
  • 7 enjoy!
