Coconut-almond Dreams

Ingredients
- 1/3 cup brown rice syrup
- 1 cup shredded coconut, not sweetened
- 24 whole almonds
- 1 cup semi-sweet chocolate chips, melted
Recipe
- 1 heat the brown rice syrup in a saucepan on medium heat. it will go from thick to liquidy to bubbly very fast. allow it to boil for about 2 minutes.
- 2 pour the coconut into the syrup and stir until combined. remove from stove.
- 3 line a 24 cup mini muffin pan with mini muffin cups. put about a teaspoon of the coconut mixture in each cup and pack it down.
- 4 push an almond into each coconut ball.
- 5 pour the chocolate over each candy until you can't see the coconut anymore.
- 6 place in the freezer for 5 minutes until set.
- 7 enjoy!
