Grilled Pineapple With Coconut Sorbet

Total Time: 17 mins Preparation Time: 7 mins Cook Time: 10 mins

Ingredients

  • 6 tablespoons dried shredded coconut
  • 6 slices fresh pineapple (about 1/2-inch thick)
  • 1 tablespoon honey
  • 1 1/2 cups coconut sorbet

Recipe

  • 1 1. heat grill or stove top grill pan.
  • 2 2. spread coconut into a single layer onto a microwave-safe plate,and microwave on high, tossing until lightly browned with some shreds (cook at 30 second intervals).
  • 3 3. brush pineapple with honey and grill until lightly charred and tender (about 3-4 minutes per side.).
  • 4 to serve: top each slice of pineapple with sorbet and sprinkle with toasted coconut.
